The question of sapience is a very charged one, but for our purposes we can make a quick, rough and biased definition along the lines of "species with the capacity for reason (including symbolic or abstract thought) and a degree of communication".
Where there are several species grouped under one term - such as trolls, humans or dragons - we have linked to the complete listing rather than ennumerating the species separately.
